So it's the end of the month and almost October! October is my absolute most favorite month and not just because it's my birth month. Though that does make it extra special ;) Fall is just an amazing time of year. The leaves are changing and the air is cool and crisp... unless you live in Arizona. Then fall just skips right over you and you're left wondering when the heat will end. It's a little depressing really. This has to be why God put pumpkins on this earth. Oh pumpkins. It doesn't matter how hot it is outside, pumpkin anything always gives me a little feeling of fall.... that and I crank the AC up to 68 so it at least feels like fall in my house. So I'm making a weeks worth of pumpkin lunches for my little Noodle to take to school. Why, you ask? Because it makes me happy, it reminds me of fall in the North East, and... it's just tasty! And because it's my birthday week and I can make what I want to ;)

Mon: Pumpkin Protein Muffins w/ Pumpkin Spice Trail Mix and Green Smoothie
Tues: Pumpkin "Boatmeal" w/ Hard Boiled Eggs and Cucumbers
Wed: Pumpkin Cookie Dough Dip in a Spelt Tortilla w/ Apples, and String Cheese
Thurs: Pumpkin Spice Monkey Bread w/ Turkey Bacon and Carrots
There's no school Friday so I only had to make 4 meals this week. I'm also not doing dinners this week because I'm going to be insanely busy. It's just going to be quick and easy foods this week (smoothies, salads, chicken, rice, sandwiches, etc.) because I'm really just not going to have time for anything else.
