I've had this menu done for 3 days but things have been so crazy lately that I just haven't had time to post it! I took a day off next week and decided to let Ethan have school lunch. It's yogurt and fruit so I feel pretty good about letting him eat it... if he eats it... but that's a whole other story. I'm getting in touch with my Asian side with Monday's lunch haha. Sometime's it's fun to do themed lunches! I usually do a whole week of themed food around holidays. It's probably because I'm slightly insane ;)
The sushi sandwich is just lunch meat and cheese wrapped up in a tortilla and sliced like sushi. You could even use spinach wraps to make it more "sushi-like".
The zucchini sushi roll is something Ethan learned to make at whole foods a few weeks ago. An adorable little chef taught the class. She got Ethan to eat zucchini, goat cheese, AND a sun-dried tomato! I can't even tell you how shocked I was. All you have to do is use a veggie peeler to make long zucchini ribbons. Smear on the goat cheese (we'll be using cream cheese b/c I have a ton that needs to be used) and add fresh or dried thyme, salt and pepper. Then put the sun-dried tomato on one end of the zucchini and roll it up like sushi. If my kid ate it AND liked it, any kid will!
The fruit roll-up sushi is just fruit leather (homemade or store bought) wrapped around in rice krispy treats (homemade works best) and a piece of apple. I'm making green smoothie fruit leather. I'm just spreading some green smoothie on a parchment lined baking sheet (it should be no more than 1/4 of an inch deep) and baking it in the oven at the lowest temp. Bake it for about 2-3 hours or until the top is no longer sticky. If you need a actual recipe, you could try THIS one and bake it in the oven if you don't have a dehydrator. I'm using half of THIS recipe for the rice treats. I'm using chocolate brown rice cereal instead of the plain stuff because I'd rather Ethan have chocolate at school instead of at home. Teachers just love me haha!

Tuesday: Strawberry peanut butter muffin, trail mix, cucumbers
Wednesday: Pop tarts, Hard Boiled Egg
Thursday: Pumpkin dip wrap w/ apple slices, popcorn, and carrots
Friday: School Lunch
This is what I have planned for this week's dinners
3 bean Turkey Chili (I'll post the recipe I use for this in a day or so.)
Chicken w/ Herb Sauce (you can use tenderloin like the recipe calls for if you'd rather) and Mac n Cheese
Homemade Pizza (I use THIS dough recipe. Use whatever toppings, cheeses, and sauces you like. I'll be using ground Italian turkey sausage, turkey bacon, uncured pepperoni, with a tomato sauce and a 5 cheese blend. YUM!)
Chicken n Dumplins (I have a Cracker Barrel recipe I got from a book that I use. If you would like the recipe let me know and I'll try to scan it. It's an extremely long process so if you have a family recipe or an easy one you've found online, I'd use that one)
Mozzarella Stuffed Turkey Burgers with a Pesto Mayo (I'll have this recipe posted in the next day or so. Thanks, Amanda, for reminding me of this one!)
