As some of you already know, I love making healthy food that tastes just as good (if not better!) as unhealthy food. Every week I make a meal plan for dinner and my oldest's school lunches. Being organized and setting aside a few hours on a Thursday or Friday really save me a ton of time when it comes to cooking during the week. A lot of the meals I make can be made ahead and frozen to save me even more time. Luckily for me I have a wonderfully supportive husband who is always willing to help out when it's needed (like when I make a mess in the kitchen and don't feel like cleaning it up lol) and 2 awesome little sous chefs who love to help me cook. My hope is that I can inspire other people to take charge of their health by changing the way they eat, being organized, and learning to enjoy being in the kitchen. I also hope to clear everyone's facebook page of all my (what I'm sure are obnoxiously annoying) "menu's for the week" posts. All the recipes I use will be linked back to their original source and I'll try to make up recipes for any meals I make up myself. The problem is, I never measure when I cook but I'll do my very best to guesstimate ;) Hope you enjoy <3
Ethan's lunch menu:
Monday: Crackers, Cheese, Turkey, and Carrots
Tuesday: Cinnamon Roll Pancakes, Turkey Bacon, Apple Slices
Wednesday: Snicker doodle dip wrap w/ Banana, Hard Boiled Eggs
Thursday: Waffle Sandwich w/ Raspberries, Protein Milk, Cucumber Slices
Friday: Chicken and Cheese Sandwich, Carrots, and Grapes
Dinner Menu:
(There are no specific days these meals are made. Like I said, I like to plan ahead. I may make 2 or 3 meals in one day to save me some time.)
Brown Rice Spaghetti w/ meat sauce (my own recipe that I'll eventually post. No time today though. Sorry!)
Grilled Fish Tacos
Bone Broth Chicken Noodle Soup (The soup recipe is one I've made up and will post another day)
Grilled Cheese Turkey Burgers (Pretty self explanatory: Cook your favorite turkey burger recipe, put it on some sour dough bread with your favorite cheese, and grill it like you would a grilled cheese. Easy peasy!)
