It is going to be GORGEOUS in the mountains this weekend so the hubs and I decided it would be the perfect weekend to go hiking. This means we will need some quick and easy meals for lunches next week since I won't be able to spend all weekend in the kitchen making food. As usual, the recipes I'm making this week freeze well for weeks when you just don't have time to, or just don't want to, make food.
Ethan's Lunch Menu:
Monday: School Lunch
Tuesday: Apple Protein Donuts, Cucumbers, Carrots
Wednesday: Superseed Bar, Turkey Bacon, Grapes
Thursday: Portable Pancake Pockets w/ Cinnamon Apples, Eggs, Spinach Salad
Friday: Pumpkin Spice Monkey Bread, Carrots, Red Velvet Bean Brownie
I don't have a dinner menu this week. I'm going to be spending a lot of time at the gym so this week's dinners will consist mostly of salads, rice, beans, meat, and smoothies. Basically, nothing fun or exciting. Hopefully I'll feel like I have a little more time and energy to plan something better next week.
