I know it's been a few weeks since I've posted a menu. Hubs and I went on vacation and I've had some issues getting back into the swing of things. Basically, I stayed in vacation mode for most of the month but it's time to get back to business. Plus, this week is one of my favorite weeks to make lunches for Ethan. All of his meals this week have a Halloween theme! Crazy? Yes. But I don't care. I'm going to keep making themed food until he gets old enough to be embarrassed by me... and even then I might still make them. There are worse things to be embarrassed by than food, right?
I've also come up with a few dinner recipes for this week. I've decided that I'm going to start buying produce that's in-season. I know I really should have been doing this for years but sometimes I just want strawberries in December darn it! I had no idea what was in season in my area so I googled it (I live on google and pinterest!) and found an amazing site that broke in-season produce down by month. Yes! I was so excited! It's not the same for every state so you may have to do a bit of searching but for all my AZ friends, you can check out the site I found Here. After figuring out what veggies were produced in October and November I took to pinterest to find some recipes. So just a little disclaimer, I've never tried these recipes before so if they're not good, I'm sorry.
Ethan's Lunch Menu
Mon: School Lunch (he really likes the cheese flauta so I try to let him have them whenever they have them for lunch)
Tues: Mummy tortillas (one whole tortilla with strips of another tortilla on top made to look like a mummy) filled with pumpkin bean dip and a little strawberry jelly (to look like blood on the mummy bandages) with a side of carrots
Wed: Monster face sandwich with string cheese and a side of tortilla chips
Thurs: Waffle spider sandwich (pb&j on waffles with pretzels sticking out of the side so it looks like a spider) with pear slices and ghost eggs (use black food coloring markers to draw a ghost face on a hard boiled egg)
Fri: Mummy Hot Dogs (hot dog wrapped with crescent dough) with mummy apple bites and ghost yogurt dip (greek yogurt with 3 chocolate chips to look like eyes and mouth of a ghost)
This Weeks Dinners
Beef Noodle Soup with bok choy and shitake mushrooms (I'm using rice noodles instead of zucchini spirals)
Easy Garden Skillet (I'm using spicy Italian turkey sausage instead of the turkey meat balls. I also have no idea what "sugar sweet tomatoes" are so I'm skipping that all together lol)
Skinny Buffalo Chicken Dip (this recipe has you stuff peppers with the dip but I'm going to forgo that this time and wrap it up in a spelt tortilla. I also add a little homemade ranch seasoning to give it the true buffalo chicken flavor. The recipe for that can be found Here)
White Chicken Chili (I add an extra can of black beans and some cooked short grain brown rice.)
