Last week was insanely busy. I must never do that to myself again. I feel so far behind on everything! This week I have promised myself to take it one day at a time and work extra hard on my time management skills. And on that note, I'm cooking for 8 extra people every day this week lol. Thankfully, Ethan's eating lunch at school 3 times this week which saves me a little time not having to plan out lunch every day. It makes me feel a little guilty not making his lunches every day but I think he likes getting his lunch like a "big boy" at school. My baby's growing up so fast :'(
The meals I'm making this week, however, are a lot quicker and easier to make than the meals I made last week. I have a meal that can be frozen ahead of time, a crockpot meal, and another that you can whip up in literally 30 mins tops! This will leave me plenty of time to think about Thanksgiving dinner next week. We're just doing our typical "Arizona Thanksgiving" (turkey burgers, french fries and gravy, grilled green beans, etc) but there's still quite a bit of planning that goes into it. Plus there's dessert to think about!
Ethan's Lunch Menu:
Mon: School Lunch
Tues: Pumpkin overnight oats w/ Banana and Trail Mix
Wed: School Lunch
Thurs: Waffle Sandwich w/ Turkey Bacon and Carrots
Fri: School Lunch
Dinner Menu:
Mon: Salisbury Steak w/ Mashed Potatoes and a side of peas
Tues: Creamy Chicken Pesto w/ Linguine and a side of Mixed Veggies (will post recipe soon!)
Wed: Carne Guisada Meat w/ Brown Rice (I know the recipe calls for it to be wrapped in a burrito but flightline guys just don't have the luxury to make themselves a burrito so rice it is lol)
Thurs: Creamy Turkey Sausage and Wild Mushroom Sauce w/ Linguini and peas
Fri: No food
