I have SO much to do this week! I've started making food for the guys at the hubby's work this week. This means planning meals for at least 5 extra people every day plus the cooking and portioning. AND on top of that I'm making a cake and cupcakes for a friend. I know it sounds like a lot of work but I also know that I've been called to take care of people (hence why I'm a stay at home mom). Being able to feel these people healthy meals every night makes me ridiculously happy. PLUS, not only do I get to feed these people every night but I also get to make a child's birthday extra special. It just doesn't get better than that in my world! However, because I have more than usual on my plate this week, I'm going to have to do as many easy meals for Ethan's lunch as I can. Thankfully he has off on Tuesday which is one less day I have to plan a lunch.
Ethan's Lunch Menu:
Mon: Sugar-free Pumpkin Spice Monkey Bread w/ carrots & turkey bacon
Tues: No School
Wed: Pumpkin Protein Oat Bars w/ pear
Thurs: Chicken Sandwich w/ salad
Fri: Cinnamon Roll Pancakes w/ apple & eggs
Dinner Menu:
Mon: Sesame Chicken w/ Fried Rice and a side of Garlic Roasted Green Beans (I'll post the recipe for Fried Rice in a day or so)
Tues: Veterans Day so there's no work
Wed: 3 Bean Chili w/ Whole Wheat Cheddar Biscuits
Thurs: Baked Vodka Cream Tortellini w/ Broccoli (again, I'll post the recipe in a day or so)
