It was a crazy busy week this week. We're still adjusting to taking care of an extra kiddo (and by "adjusting" I mean making myself get stuff done instead of playing all day!) so I ended up using a lot of my frozen meals instead of making the meals I had planned. I still have all the ingredients to make those meals so I'll be making them this coming week. This tends to happen quite a bit and that's why I freeze everything. I just feel like playing with my kids or taking them on a fun outdoor adventure is far more important than spending the short amount of time we have after school in the kitchen. However, my freezer stock is dwindling so I'll have to spend nap time tomorrow cooking and put off the laundry I was going to do... oh darn.
It's a 4 day weekend for the hubs (YAY!) so we're going hiking on Friday. This means I need to make sure to have plenty of trail mix and other healthy snacks (like this, this, this, and this) so I'm going to be incredibly busy for the next day or so. Thankfully I'll have all day Monday to catch up on the rest of next week's meals.
Ethan's Lunches:
Monday: No School
Tuesday: Cinnamon Roll Pancakes, Turkey Bacon, Apple Slices
Wednesday: Yogurt bowl (I use the plain Fage greek yogurt and flavor it with PB2 and honey or stevia) w/ strawberries, and cucumbers
Thursday: Banana bread muffin w/ Hard Boiled Eggs, and Peas
Friday: Raspberry Scone Sandwich (make the scones a little bigger so you can cut it in half and add peanut butter), Carrots, and Turkey
I haven't planned any dinners this week. I still have a ton of leftovers so we'll be eating off those until Tuesday. And because it will be such a short week (hopefully!) I'll just make simple meals like chicken and rice or taco meat and black bean burritos. I hope everyone has an amazing Labor Day weekend!
