I decided to make Ethan's lunch this week instead of using up my freezer stock. Because I decided this last minute (I literally decided this 5 mins ago haha) I needed something quick and easy. I also needed something that didn't need to be baked. I don't know about you but I make a TON of noise when I bake. I really do try to be quiet but I fail every time and I just can't risk waking the kids after they just fell asleep. So that left me with sandwiches or... sandwiches. Boring! Then I remembered overnight oats! YES! That's it! Quick, easy, and most importantly, quietly made! I've made this recipe a thousand times but I was bored with all those past ideas (hot chocolate, peanut butter and strawberry, peanut butter and chocolate, tropical fruit, blueberry cobbler, and many MANY others) so I decided to come up with a new one. I was inspired by the cookie dough protein shakes I've been having after the gym (recipe to come). I followed the basic recipe I usually use but added vanilla, butter flavor, coconut sugar, vanilla protein powder, and vegan mini chocolate chips. I didn't really measure when it came to the sugars (I know, I know, sorry!) but I have a round about idea how much I used. It really depends on how sweet you want it to be. I tend to go a lot less sweet when it comes to Ethan's lunches but if it doesn't taste right to you feel free to add what you want to make it taste better :)
Ingredients:
6oz Plain Greek Yogurt (I highly recommend Fage. It's the least tangy of the greek yogurts that I've had and it doesn't have any extra added ingredients. Also, be sure it's plain since you're adding extra sugar to it.)
1/3 cup Old Fashion Oats (NOT quick cook)
1 1/2 tsp Chia Seeds
2 Tbsp Milk
^That's the basic recipe. With this you can make any flavors you want. You can change the flavor of the yogurt. You can use soy or coconut yogurt. You can add fruit or different extracts. Be creative and be sure to let me know all the fun flavors you come up with!
Now back to the cookie dough recipe!
To the basic recipe I added:
1 tsp Vanilla Extract
1/8 tsp Butter Extract
1- 1 1/2 Tbsp Coconut Sugar
1- 1 1/2 Tbsp Xylitol
1 Scoop Vanilla Protein (I used Tera's Whey. It's the "cleanest" whey protein I've found so far. Plus it's extra yummy!)
1/8 cup Vegan Mini Chocolate Chips
Mix all the ingredients together in a bowl then place in a airtight container in the fridge overnight. This recipe serves one adult (though I've never been able to eat the whole thing in one sitting) or 2 children.
