I can't believe it has been a month since the last time I posted anything. Whew! It has been one crazy month! Now that the holidays are over, it's time to get back into the swing of things. This means restocking my freezer meals! I'm running scary low on freezer food for the boys. I'm pretty sure I only have a muffin left... one. It's a lonely little muffin so I'm gonna give it some friends :) Luckily, I scored some super cheap bananas at the store so I have at least 6 lbs of bananas to bake with. Sounds a little crazy, right? If you think about it, you can replace the oil in almost any recipe with the same amount of pureed bananas. It's cheaper, easier, less messy (I hate cooking with oil. I always feel like it gets everywhere and never washes off!), and best of all less calories. Just make sure your recipe isn't one that will be gross with the added flavor of banana. I stick with basic recipes like Chocolate Zucchini Bread that have an overpowering flavor of chocolate. I also have a ton of recipes that specifically call for banana. Here are the recipes I'll be making this week. They all freeze well so if you have a lot of bananas and some freezer space double the batch and freeze some for later! Healthy and Sneaky Carrot Cookies (allow cookies to cool and put them in a freezer bag)
Chocolate Chunk Banana Bread (once this cools slice, wrap in plastic wrap, and put in a freezer bag or wrap in foil)
Protein Packed Oatmeal Cream Pies (these aren't using any banana but I'm making them anyway because they're yummy lol)
Chocolate and Yogurt Zucchini Bread (replacing the 1/3 cup oil with 1/3 cup banana puree)
Flourless Thumbprint Breakfast Cookies
Whole Wheat Banana Chocolate Chip Baked Doughnuts (If freezing do so w/o the melted chocolate on top)
Morning Glory Muffins (I'll be subbing 1/2 cup of the coconut oil with banana puree)
Individual Baked Oatmeal (I'll be using chopped bananas, sliced almonds, and cinnamon as my toppings)
